This I tried as an expirement because I wanted something home-cooked but quick with a low amount of washing up. Spring onions mean they don't need any more cooking than the tomatoes. It worked really well and was much more interesting than pesto!
Tomato sauce for one cooked in microwave
Ingredients
- 50g dried pasta shapes - fussili is ideal.
- 227g tinned chopped tomatos.
- 3 spring onions, skinned and chopped.
- Smoked praprika to taste.
- 2.5ml fresh chopped basil.
Directions
- Get pasta into boiling water and cook for 10 minutes.
- Empty tin of tomatoes into a microwave glass casserole dish (ideally that comes with a vented/ventable lid).
- Sprinkle in the spring onions.
- Stir well, put lid on pot.
- Microwave for 1min 20 seconds on medium (600W).
- Stir in the chopped basil, recover.
- Microwave for 20 seconds on high.
- Take 20-30ml of water from the boiling pasta and add to the sauce and allow to sit, covered.
- Drain pasta.
Ideally, served in a bowl.
