Very tasty, very satisfying meal that is great as a quick meal at the end of a long week with little washing up. The quorn gives a little protein, while retaining the vegetarian theme.

Pak choi stir fried in Teriyaki Sauce for 2

Ingredients

  • 10ml sesame seed oil.
  • 4 spring onions, finely sliced.
  • 2 baby pak choi, finely sliced.
  • 1 red pepper, finely sliced.
  • 2 mushrooms, peeled and sliced.
  • 30ml Quorn mince.
  • 1 x Waitrose Teriyaki and Sesame StirFry Sauce sachet.
  • 1 x Tilda Wholegrain Basmati Rice pouch (250g).


Directions

  1. Having prepared the veggies and got the quorn out of the freezer.
  2. Put the rice on a plate and delay start your microwave for 4 minutes, and 1 minute 40 seconds on 1000W.
  3. Heat oil for 30 seconds or so.
  4. Add everything else bar the rice and sauce and stir fry for 4 minutes.
  5. Add sauce and cook for a further minute.

Split the rice in two, and put the stir fry on top of the lovely rice.
