Home made courgette and tomato tagliatelle

Ingredients

Sauce

  • 1 courgettes, sliced
  • 225g cherry tomatoes, halved
  • 1 small bunch basil leaves, reserving a few
  • 1.5 tbsp pine nuts
  • 1.5 cloves garlic, crushed 
  • 2 tbsp olive oil

Pasta

Directions

  1. Get the pasta to the point where the tagliatelle is drying on the hangers, having got it to level 8 on the lasagna roller..
  2. Preheat an oven to 200°C and arrange the other ingrediants on a baking tray, having mixed well. Bake the mix for 15 minutes.
  3. Boil the pasta for 3 minutes and server the mix on top of halve the pasta.
