Modified from courgette and tomato tagliatelle. Serves 2. Haven't tried yet.
Home made courgette and tomato tagliatelle
Ingredients
Sauce
- 1 courgettes, sliced.
- 225g cherry tomatoes, halved.
- 1 small bunch basil leaves, reserving a few.
- 1.5 tbsp pine nuts.
- 1.5 cloves garlic, crushed .
- 30ml olive oil.
Pasta
- Half a portion of pasta a la Lasagna or spaghetti or tagaltelli (put the rest in the freezer)
Directions
- Get the pasta to the point where the tagliatelle is drying on the hangers, having got it to level 8 on the lasagna roller..
- Preheat an oven to 200°C and arrange the other ingrediants on a baking tray, having mixed well. Bake the mix for 15 minutes.
- Boil the pasta for 3 minutes and server the mix on top of halve the pasta.
