This recipe is great, very simple and quick. Especially using a food processor. Keeps in the fridge really well in an air tight bowl for packed lunches served with a Bread rolls.

Shepherd’s Salad Recipe for three as a starter or two as a main
Ingredients
- 1 small cucumber
- 1 small green pepper, cut to fit the feed tube
- 1 small red onion
- 2 medium tomatoes
- 1 spring onions, finely chopped
- Handful of flat leaf parsley, coarsely chopped
- 10ml Extra virgin olive oil
- 15ml lemon juice
- 2.5ml ground sumac (found in the herb section of the supermarket).
Directions
- With the machine running at max speed, use the Express DiceTM pusher to push the cucumber, green pepper, red onion and tomatoes through the dicing grid - place both hands on top of the pusher and press down firmly.
- Work in batches, transferring the contents of the processor bowl into a large mixing bowl as necessary.
- Using the knife blade, finely chop the spring onions and parsley.
- Combine the cucumber, tomatoes, spring onions and parsley in a medium mixing bowl.
- Add the olive oil and lemon juice, season with salt and pepper and mix well.
- Transfer to a serving dish, then sprinkle the ground sumac over the top.
Serve as soon as it is ready. Delicious with garlic dough balls.
