Carrot and coriander soup

Ingredients for two

  • 1 small onion chopped.
  • 1 clove garlic crushed.
  • 400g carrot cut no more than an inch long in any diameter.
  • 325ml cold chicken stock.
  • 7.5ml ground coriander.
  • salt and pepper.
  • 10ml olive oil.

Directions.

  1. Put all ingredients aside from the herbs, seasoning and oil into a large jug.
  2. Microwave at 1000W for 5 minutes.
  3. Blend with a stick blender until thick, add corriander.
  4. Microwave at 660W for 8 minutes.
  5. Season before allowing to cool for 4 minutes or so.
  6. Stir in the olive oil and serve.
