This hinges on the pastry you make. Instead of a plain sweet shortcrust, this is a "french pastry" with egg and butter instead of lard.

French pastry

Ingredients

  • 150g plain flour
  • 40g caster sugar
  • 75g butter
  • 1 egg
  • 2.5ml grated lemon rind
  • 1ml salt

Directions

  1. Mix in mixer until you have a smooth pastry
  2. Stand for 30 minutes - if you don't need all of it, this is the time to place half in a freezer bag and place in freezer.

Mince pies

Ingredients

  • ½ quantity of French pastry
  • Sweet mincemeat

Directions

  1. Preheat the oven to 180°
  2. Roll out the French pastry and cut six 7.5cm discs and 6.5cm discs.
  3. Place the six large discs into a greased pie dish.
  4. Spoon in 5ml of mincemeat for each pie.
  5. Place lid on top of each flan.
  6. Cook for 25 minutes in your oven.

Serve with Brandy butter and whipped cream.
