Quick tomato soup

Ingredients

  • 15ml oil
  • 1 onion chopped
  • 1 stick of celery chopped
  • 5ml paprika
  • 1 tin tomatoes
  • 500ml vegetable stock
  • 5ml dried basal

Directions

  1. Put the oil, onion, celery and paprika in a large bowl and cook on HIGH MICROWAVE for 5mins.
  2. Add tomatoes, sugar and hot stock to the bowl and cook on MEDIUM MICROWAVE for 15mins.
  3. If using a hand blender or glass blender... or allow to cool
  4. Add dried basil and purée until smooth.
  5. If you cooled to purée, reheat for 3minutes on Medium power.
  6. Serve
