Honey roast ham and onion sauce for 2/3 people

We have this for the Sunday before Christmas and as our Easter meal if not having Turkey.

Honey roast ham

Ingredients

  • 750g Unsmoked gammon joint.
  • 8-12 Cloves.
  • Runny honey.
  • Cherries to garnish (optional).

Directions

  1. Cook ham as appropriate in The roaster, covered in foil.
  2. 30 minutes before due to end, remove from oven and score with a sharp knife, forming a "hatched" pattern
  3. Where the lines intersect, put a whole clove into the ham.
  4. Cover with honey and return to oven for 30 minutes on circo-therm at 165°.

This is really delicious with whole roast carrots, baby corn, pak choi leaves, and chopped pepper, especially at Easter time.

When you add the honey, add the carrots and whole baby corn round the joint.

When there are 15 minutes to go, add the pak choi leaves and chopped pepper - yellow works really well flavour-wise.

I do quartered roast baby cauliflowers, but add these to the roast potato tray at the 30 minute mark.

Onion sauce

Ingredients

  • 1 small onion sliced.
  • 25g butter.
  • 25g corn flour.
  • 150ml milk.
  • white pepper and salt for flavour.

Directions

  1. Heat onions and butter.
  2. Once butter is melted, add flour and stir until a roux is formed.
  3. Add milk and bring to boil
  4. Cook for 15-20 minutes and then place in jug and keep warm until served.
