Based on Country slices. Having read 15 of such directions, I felt this had the best chance of being tasty and like the famous brand with little to no fuss.

Country slices

Ingredients

  • 150g Unsalted Butter (Softened)
  • 150g Light Muscovado Sugar
  • 2 Medium Eggs
  • 150g Plain Flour
  • 5ml Baking Powder
  • 2.5ml Mixed spice
  • 80g Luxury Mixed Dried Fruit (The best you can get)

Directions

  1. Heat fan oven to 180°C and line a 500g bread tin with baking parchment.
  2. Cream butter and sugar.
  3. Beat in eggs.
  4. Beat in flour and baking power and Mixed spice.
  5. Fold in fruit.
  6. Pour into bread tin. Bake for 35-40 minutes.
  7. Cool cake and tin for 10 minutes.
  8. Turn out and if desired, dust with caster sugar.

Lovely with a cup of tea.
