Ingredients

  • 25g butter
  • 1 small onion, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 stick of celery (optional)
  • 1 medium butternut squash - peeled, seeded and cubed
  • 500ml chicken stock
  • paprika to garnish as using a commercial stock cube
  • ground nutmeg to garnish

Directions

Fry onions then add rest. Cook for 40 mins then blend and serve. Makes four good bowls of soup. Paprika or nutmeg lift this as well as look good.
