When I first bought a microwave, I vowed never to do chicken in it. As a child, I'd be subjected to my parents' experiements with their first microwave and thought, not for me.

This is very civilised, quick, and low effort. You end up with a steamed chicken breast. Tastes good for a quick meal with pasta, ratatouille, rice, or potatoes.

Microwave a single chicken breast

Ingredients

  • A raw chicken breast.
  • Seasoning (or other herbs for taste).
  • Some water.

Directions

  1. Get a pyrex casserole with a lid or a cook and heat bowl and lid that allows the chicken breast some wiggle room.
  2. Place chicken in the bowl.
  3. Fill round the chicken with tap water, about a third of the way up the breast.
  4. Season.
  5. Microwave at 750W for 2 ½ minutes.
  6. Remove from microwave and flip the chicken breast in the bowl.
  7. Cook for another 2 minutes at 750W.
  8. Check chicken is a least 62°C.
    If it's not do for 10-30 seconds more depending how far off the meat is.
  9. Stand for two minutes - by which time the chicken should be at 73°C.

Serve with boiled vegetables or salad and a starch of your choice.
