Butternut squash soup

Ingredients

  • 12.5g butter
  • 1 small onion, chopped.
  • 1 medium carrot, chopped.
  • 2 medium potatoes, cubed.
  • 1 stick of celery (optional).
  • 1 medium butternut squash - peeled, seeded and cubed.
  • 500ml chicken stock.
  • paprika to garnish as using a commercial stock cube.
  • ground nutmeg to garnish.

Directions

  1. Fry onions for 5 minutes.
  2. Add the rest.
  3. Cook for 40 mins then blend and serve.

Makes four good bowls of soup. Paprika or nutmeg lift this as well as look good.
