As the majority of the cakes I make are eaten fresh from the oven, this is enough for 2 or 3 people.
Victoria sponge fairy cakes
Ingredients
- 2oz butter, lightly salted.
- 2oz caster sugar.
- 1 medium egg.
- 2oz self-raising flour.
- 2.5ml lemon, Ameretto, vanilla essance - what ever flavour you'd like to gently flavour the cakes.
Directions
- Turn on fan oven at 180°C.
- Cream butter and sugar in mixer with cream beater.
- Add egg.
- Add flour.
- Add flavour.
Place into fairy cases and bake in the oven for 15 minutes. Once cooked, divide between the eaters and remove cakes. Serve with a lovely cup of tea.
