This is used when you need a sweet shortcrust pastry but this is smoother and more flavoursome.

French pastry

Ingredients

  • 150g plain flour
  • 40g caster sugar
  • 75g butter
  • 1 egg
  • 2.5ml grated lemon rind
  • 1ml salt

Directions

  1. Mix in mixer until you have a smooth pastry
  2. Stand for 30 minutes - if you don't need all of it, this is the time to place half in a freezer bag and place in freezer.
