I've not tried this yet but adapted from a recipe in Waitrose's food magazine.

Self-saucing chocolate pudding for three

Ingredients

  • 60g unsalted butter
  • 47ml whole milk
  • 125g light brown sugar
  • 1 egg
  • 82g self-raising flour
  • 1ml bicarbonate of soda
  • 1ml find sea salt
  • 25g cocoa power

Directions

  1. Put butter in microwavable bowl, cover and melt for 30 second.
  2. Add milk, half the sugar, then the eggs, beating until smooth.
  3. In another bowl, mix flour, bicarb, salt and 15g of cocoa then pour into beaten butter mixture.
  4. Pour batter into third bowl and boil some water.
  5. Combine the remaining incredients in a small jug and pour in 165ml of boiling water, whisking to a smooth sauce. Pour over batter then pop into microwave for 4 minutes.

Serve with ice cream.
