Eggs royale

Simple, quick and a great snack with bread or crumpets. I like this with spinach too, but that's because that's how I first had eggs benedict - with salmon and spinach.
Poached eggs in microwave
Ingredients
- Hollandaise sauce
- 2 crumpets
- 2 Poached eggs in microwave
- 20g spinach
Directions
- Make Hollandaise - this is twice as much as you need.
- Toast crumpets
- Make eggs and while they are sitting
- Cook spinach for 20 seconds
Put crumpets on plate, top them with spinach and place an egg on each crumpet. Pour on Hollandaise to taste.
