Bulgar wheat salad

Based on [1] but look at the last item! For me, this is ideal, less protein in a salad accompaniment. Not tried yet.

Ingredients

  • 1 cauliflower
  • few sprigs of parsley

Dressing

  • 50ml olive oil
  • 25ml maple syrup
  • 1 lemon, juice only

Directions

  1. Blitz the cauliflower in a food processor.
  2. For the dressing, whisk the ingredients together.
  3. Mix the dressing with the cauliflower, parsley and dressing.
