This is not a sweet drink: it is so dry, it bites back.
Home made dry ginger ale
Ginger decoction
Ingredients

- 100ml water.
- 50g whole root ginger, grated. Keep the skin on, it will make it more gingery.
- 1 whole clove.
Soda water
Ingredients
- 1.5l chilled carbonated water.
Directions
- Make the ginger decoction.
- Puree ginger with 50ml of the water.
- Add the remaining 50ml and pour into 500ml microwavable jug.
- Add clove.
- Heat at 1000W until boiling, usually 2 minutes 20 seconds, stirring occassionally.
- Microwave for 3½ minutes at 660W - stir every minute or so.
- Steep for 10 minutes.
- Strain out the bits to leave the decoction, a tea strainer works well for this or a coffee filter.
- Add 20ml decoction to a 330ml glass then add the chilled carbonated water.
Best used immediately after the decoction is made.
