* 12½g butter
* 400g parsnips, peeled and diced into a 1cm square (keep the peelings).
* 1 small onion, chopped.
* 2 apples diced.
* 1 medium carrot, chopped.
* 400ml full fat milk.
* 2 medium potatoes, cubed.
* 100ml double cream.
* 1 stick of celery (optional).
* 5ml curry powder.
* 1 medium butternut squash - peeled, seeded and cubed.
* Knob of butter.
* 500ml chicken stock.
* Vegetable oil for frying.
* paprika to garnish as using a commercial stock cube.
* Freshly grated nutmeg for garnish.
* ground nutmeg to garnish.
* Seasoning, white pepper and salt.

# Fry onions for 5 minutes.
# Grate parsnips and thinly slice apples - a food processor is grate for this.
# Add the rest.
# Put the parsnips, apples, milk, cream, and curry powder in a pan and bring to the boil.
# Cook for 40 mins then blend and serve.
# Simmer for five minutes.
 
# Deep fry the peelings until they are crispy, and drain onto kitchen paper. Season.
Makes four good bowls of soup.  Paprika or nutmeg lift this as well as look good.
# Blitz the soup until it is smooth.

Parsnip and apple soup

Ingredients

  • 400g parsnips, peeled and diced into a 1cm square (keep the peelings).
  • 2 apples diced.
  • 400ml full fat milk.
  • 100ml double cream.
  • 5ml curry powder.
  • Knob of butter.
  • Vegetable oil for frying.
  • Freshly grated nutmeg for garnish.
  • Seasoning, white pepper and salt.

Directions

  1. Grate parsnips and thinly slice apples - a food processor is grate for this.
  2. Put the parsnips, apples, milk, cream, and curry powder in a pan and bring to the boil.
  3. Simmer for five minutes.
  4. Deep fry the peelings until they are crispy, and drain onto kitchen paper. Season.
  5. Blitz the soup until it is smooth.
