Based on Country slices. Having read 15 of such directions, I tried this and it tastes much like the famous brand without too much fuss.
Our combination microwave is so efficient, it doesn't burn too much energy to bring it to 180°C in preheating, on the bottom shelf this gives great results. Use the quicker time if you preheat!
Country slices
Ingredients
- 135g Unsalted Butter (Softened).
- 135g Light Muscovado Sugar.
- 2 Medium Eggs.
- 150g Plain Flour.
- 5ml Baking Powder.
- 2.5ml Mixed spice.
- 80g Luxury Mixed Dried Fruit (The best you can get).
Directions
- Line a 500g bread tin with baking parchment.
- Cream butter and sugar.
- Beat in eggs.
- Beat in flour, baking power, and mixed spice.
- Fold in fruit.
- Pour into bread tin. Bake at 180°C (fan oven) for 35-50 minutes (depending on whether you preheat or not).
- Cool cake and tin for 10 minutes.
- Turn out and if desired, dust with caster sugar.
Lovely with a cup of tea.
