Celeriac soup
Adapted from instruction book from Celeriac soup.
Ingredients
- 30ml olive oil.
- 1 celeriac peeled and cut into cubes.
- 1 medium potato peeled and cut into cubes.
- 1 Leek trimmed, washed and roughly sliced.
- 1 Onion peeled and roughly chopped.
- 1 clove Garlic sliced.
- 500ml vegetable stock.
- parsley leaves handful, washed and roughly chopped to garnish.
Directions
- Heat pan, add oil.
- Soften veg for 10 minutes then add stock and bring to boil.
- Boil for 20 minutes then blend.
- Serve two bowls and sprinkle with parsley.
Save rest for lunch another day.
