I've not tried this yet but adapted from a recipe in Waitrose's food magazine.
Self-saucing chocolate pudding for three
Ingredients
- 60g unsalted butter
- 47ml whole milk
- 125g light brown sugar
- 1 egg
- 82g self-raising flour
- 1ml bicarbonate of soda
- 1ml find sea salt
- 25g cocoa power
Directions
- Put butter in microwavable bowl, cover and melt for 30 second.
- Add milk, half the sugar, then the eggs, beating until smooth.
- In another bowl, mix flour, bicarb, salt and 15g of cocoa then pour into beaten butter mixture.
- Pour batter into third bowl and boil some water.
- Combine the remaining incredients in a small jug and pour in 165ml of boiling water, whisking to a smooth sauce. Pour over batter then pop into microwave for 4 minutes.
Serve with ice cream.
