Goat's cheese flan

Ingredients

Pastry

Filling

  • 7.5ml olive oil.
  • 1 medium onion, sliced thinly into half-moon slices.
  • 115ml whipping cream.
  • 2 medium eggs.
  • 1 medium egg yolk.
  • 1ml teaspoon salt.
  • 0.5ml teaspoon black pepper freshly ground.
  • 15ml fresh thyme chopped.
  • 2oz fresh goat cheese crumbled.

Directions

  1. Follow instructions in Savoury short crust pastry - bear in mind this needs to be done at least 30 minutes before the rest!
  2. Finely slice onion (half rings are a great shape for this pie).
  3. Caramelise onions for 20 minutes in the olive oil, stirring occasionally.
  4. Beat eggs, milk, and cream using a hand blender.
  5. Preheat a fan oven to 170°C.
  6. Get flan dish out of the fridge and place cheese, onions, and thyme over pricked base.
  7. Pour the cream mix over it and then bake at 170°C for 35 minutes.

Allow to cool for 5 to 10 minutes before serving - I use this time to boil some green veg.
