Goat's cheese flan

Ingredients

Pastry

(Note this is mixed units but this makes exactly the right amount of pastry for my flan dish!)

  • 5oz plain flour
  • 1.25oz lard
  • 1.25oz butter
  • 25ml cold water

Filling

  • 7.5ml olive oil
  • 1 medium onions sliced thinly into half-moon slices
  • 115ml whipping cream
  • 2 medium eggs
  • 1 medium egg yolk
  • 1ml teaspoon salt
  • 0.5ml teaspoon black pepper freshly ground
  • 15ml fresh thyme chopped
  • 2oz fresh goat cheese crumbled

Directions

  1. Make pastry and line an 8" flan dish.
    If using a Kenwood Chef, put all ingredients for the pastry in the bowl. Using the K beater, mix on speed 1 increasing up to speed 4/5. When a ball is formed, stop mixer and place pastry in fridge to rest for at least 30 minutes.
  2. Finely slice onion (half rings are a great shape for this pie).
  3. Caramelise onions for 20 minutes in the olive oil, stirring occasionally.
  4. Beat eggs, milk, and cream using a hand blender.
  5. Get flan dish out of the fridge and place cheese, onions, and thyme over pricked base.
  6. Pour over cream mix and bake at 170°C for 35 minutes.

Allow to cool for 5 to 10 minutes before serving - I use this time to boil some green veg.
