As the majority of the cakes I make are eaten fresh from the oven, this is enough for 2 or 3 people.
Victoria sponge fairy cakes
Ingredients
- 2oz butter, lightly salted
- 2oz caster sugar
- 1 medium egg
- 2oz self-raising flour
- 2.5ml lemon, Ameretto, vanilla essance - what ever flavour you'd like to gently flavour the cakes
Directions
- Turn on fan oven at 180°C
- Cream butter and sugar in mixer with cream beater
- Add egg
- Add flour
- Add flavour
Place into fairy cases and bake in the oven for 15 minutes. Once cooked, divide between the eaters and remove cakes. Serve with a lovely cup of tea.
