A great deal of effort but a tasty treat for a special meal the whole family will love.

Duck a l'orange

Ingredients

  • 1 orange (optional)
  • 120ml of orange juice
  • 15ml soft brown sugar
  • 15ml white vinegar
  • 475ml water
  • 30ml lemon juice
  • 1 chicken stock cube
  • 15ml arrow root
  • 120ml Grand Marnier

Directions

This takes 30 minutes or so, so needs to be started before cooking joints!

  1. If using orange, remove rind
  2. Add rind to remaining liquid ingredients (excluding water and Grand Marnier) and stock and bring to the boil.
  3. When reduced by half, stir in arrow root and water.
  4. Remove from heat and stir in Grand Marnier
  5. Drain duck juices and recover duck in sauce and cook for 30 minutes before serving.
