Adapated from Roasted Brussels Sprouts Bacon and Chestnuts.
Roasted sprouts, bacon and chesnuts
Definitely one of my working person recipes, this is great as a means of using up leftovers.
Ingredients for 4 on Christmas Day
- 200g sprouts, halved.
- 90g chestnuts, skinned, and halved.
- 1 slice of bacon, cuts in thin strips.
- 15ml olive oil.
- Seasoning to taste.
Directions
- Blanch sprouts for 3 minutes.
- Drain sprouts, toss into big crockery mixing bowl.
- Cut in bacon and nuts, season and pour on olive oil.
- Mix well.
- PLace on dry baking tray and place in oven.
- Cook for 30 mins @ 200°C fan.
Serve alongside turkey for a seasonal treat on the big day. Great cold next to bubble and squeak too.
