When I first bought a microwave, I vowed never to do a roast chicken in it. As a child, I'd be subjected to my parents' experiements with their first microwave and thought, not for me.
This is very civilised, quick, and low effort. Tastes and looks good.
A quick chicken meal for two
Ingredients
- Raw chicken breast and wings - you need to know the weight and then us Microwave roaster.
- Potatoes for boiling.
- Frozen veg for boiling.
- 10ml dried bisto chicken grannules.
Directions
- Weigh chicken and work out time in the Microwave roaster.
If chicken is going to be less than the boiled potatoes, get the spuds going. - Once boiling set the timer on the potatoes.
- Set the chicken off for the half the estimated time in a glass roasting tin on 190@deg;C and simmer.
Remember to place the joints "skin side down". - When the microwave stops, flip the pieces, and start the second half the cooking time.
- Add the remaining vegetables to the potatoes pot.
- Prep the gravy jug ready for the vegetable water. Rest for a few minutes.
- When the microwave finishes the cycle, get the chicken out of the oven and check everything is cooked.
- If it is - serve up the vegetables and drain the water in to the gravy pot.
