I had the idea for this on Wednesday, as I had made Meat pie for two and had a quantity of puff pastry left over. As someone who likes ease and depth of taste, this was an interesting experiment to use up something that could have been in the bin otherwise! A nice treat for two people a few days after a delicious pie :)

A pair of tart tarts

Ingredients

  • 4 inch complete width of pre-rolled puff pastry - if making otherwise, 4 inches by 10 inches about 5mm in depth.
  • 30ml of frozen mixed berries.
  • 2.5ml lemon juice.

Directions

  1. Preheat fan oven to 180 °C. Very important.
  2. Get the puff pastry out of the fridge.
  3. Rub two out of four individual yorkshire pudding baking trays, 4 inches in diameter.
  4. Lay out the warmed pastry into the trays. Trim off any excess, if you wish to.
  5. Fill the pastry lined tray up to a third full of frozen mixed berries.
  6. Sprinkle over the lemon juice.
  7. Bake in the now warm oven for 22 minutes (like the pie).

Delicious with ice cream or whipping cream.
