Cauliflower couscous
Based on [1] but look at the last item! For me, this is ideal, less protein in a salad accompaniment. Serves two. Not tried yet.
Ingredients
- 1 cauliflower
- few sprigs of parsley
Dressing
- 50ml olive oil
- 25ml maple syrup
- 1 lemon, juice only
Directions
- Blitz the cauliflower in a food processor.
- For the dressing, whisk the ingredients together.
- Mix the dressing with the cauliflower, parsley and dressing.
