Adapated from Roasted Brussels Sprouts Bacon and Chestnuts.

Roasted sprouts, bacon and chesnuts

Ingredients for 4 on Christmas Day

  • 200g sprouts, halved.
  • 90g chestnuts, skinned, and halved.
  • 1 slice of bacon, cut into thin strips.
  • 15ml olive oil.
  • Seasoning to taste.

Directions

  1. Blanch sprouts for 3 minutes.
  2. Drain sprouts, (if they were frozen, cut into halves) and toss into big mixing bowl.
  3. Cut in bacon and nuts, season and pour on olive oil.
  4. Mix well.
  5. Place on dry baking tray and place in oven.
  6. Cook for 22 mins @ 200°C convection or 180°C in fan oven - do not preheat.

Serve alongside turkey for a seasonal treat on the big day. Great cold next to bubble and squeak too.
