I had the idea for this on Wednesday, as I had made Meat pie for two and had a quantity of puff pastry left over. As someone who likes ease and depth of taste, this was an interesting experiment to use up something that could have been in the bin otherwise! A nice treat for two people after a delicious pie :)
Whether cooking in a fan oven or a combination one, the use of the pyrex casserole lid enables the pastry to heat well, and for the combination oven's microwaves to pass easily into the fruit. If doing the pie on the same day, it also allows for "one dish" cooking for two meals!
Recently updated to include instructions for cooking in a combination microwave. Much quicker and more energy efficient.
A pair of tart tarts
Ingredients
- 4 inch complete width of pre-rolled puff pastry - if making otherwise, 4 inches by 10 inches about 5mm in depth.
- 30ml of frozen mixed berries.
- 2.5ml lemon juice.
Directions
- If cooking in a fan oven, preheat fan oven to 180°C. Very important.
- Get the puff pastry out of the fridge.
- Use a pyrex dish approx. 17cm and rub butter into the flat surfact.
- Cut the pastry into two.
- Lay out the pastry into the dish.
- Fill the flat pastry halves with a few frozen mixed berries, about 2.5cm in diameter.
- Sprinkle over the lemon juice.
- Gather up the corners to form packets.
- Bake in the now warm oven for 22 minutes (like the pie).
Or if cooking in a combination microwave:
Bake at 180°C and simmer for 10 minutes and stand for 2 minutes.
Delicious with ice cream or whipping cream.
