Few meals in the world are as tasty and good for the planet as Bubble and squeak. A traditionally English, Scottish or Welsh take on what to do with cooked left over vegetables.

Bubble and squeak

Ingredients

  • Left over boiled potatoes.
  • Left over boiled cabbage or sprouts.
  • Any other left over vegetables.
  • Optional 1 diced onion.

Directions

  1. Put the left overs in a single pan and mash together.
  2. Heat some sunflower oil, dripping or butter.
  3. If using the onion, start frying it until just turning brown.
  4. Either add the mash to the onion or start frying in the fat.
  5. Serve when cooked through.
