Recently, I have replaced the plain flour with a mix of plain and wholemeal flour.  Tasty very similar, maybe slightly more depth, but increases the fibre content.

Based on Country slices. Having read 15 of such directions, I tried this and it tastes much like the famous brand without too much fuss.

Our combination microwave is so efficient, it doesn't burn too much energy to bring it to 180°C in preheating, on the bottom shelf this gives great results. Use the quicker time if you preheat!

Ingredients

  • 135g Unsalted Butter (Softened).
  • 135g Light Muscovado Sugar.
  • 2 Medium Eggs.
  • 75g Plain Flour.
  • 75g Wholemeal flour (optional - you could use another 75g plain flour).
  • 5-6ml Baking Powder (stick to 5ml if using just plain flour).
  • 15ml water (do not use if not using wholemeal flour).
  • 2.5ml Mixed spice.
  • 80g Luxury Mixed Dried Fruit (The best you can get).

Directions

  1. Line a 500g bread tin with baking parchment.
  2. Cream butter and sugar.
  3. Beat in eggs.
  4. Beat in flour, baking powder, water (if using wholemeal flour), and mixed spice.
  5. If using wholemeal flour, wait five minutes for the wholemeal flour to absorb the water, this makes for a better texture.
  6. Fold in fruit.
  7. Pour into bread tin. Bake at 180°C (fan oven) for 35-50 minutes (depending on whether you preheat or not).
  8. Cool cake and tin for 10 minutes.
  9. Turn out and if desired, dust with caster sugar. We tend not to do this.

Lovely with a cup of tea. Keeps in a tin for a week, too.
