When I first bought a microwave my dad said to me, that's how to cook fish. Bit of water and the fish steams perfectly - the trick is not to over do the cooking. I use a microwave fish kettle to create the steam bath but cling film over a plate works if you don't have one.
Microwave steamed trout
Ingredients
- 150g salmon or trout.
- 30ml water or 15ml water and 15ml lemon juice.
Directions
- Put liquid into kettle or onto plate.
- If using the kettle, put in separator. (It's worth wiping the separator down with sunflower oil as it stops the fish sticking to it!)
- Lay fish down and then cover with the lid or the cling film.
- Microwave on @ 660W for 2 ¼ minutes (2 minutes 15 seconds) each fish. If doing more than one, arrange head to tail.
Serve with new potatoes, peas and horse raddish sauce. A delicious treat for one person.
If doing salmon steaks or other fish, think 150g of meat = 2 ¼ minutes in the microwave => 0.9 seconds per gram. It is worth, when doing more than one piece of fish or whole fish, to arrange them head to tail, to allow both pieces to absorb the microwaves from the transducer evenly. If doing a big piece of fish, achieve the same thing by turning it half way through cooking.
Remember to allow the fish to stand after cooking. Microwave cooking really benefits from letting the food rest after cooking.
