Butternut squash soup
Ingredients
- 12½g butter
- 1 small onion, chopped.
- 1 medium carrot, chopped.
- 2 medium potatoes, cubed.
- 1 stick of celery (optional).
- 1 medium butternut squash - peeled, seeded and cubed.
- 500ml chicken stock.
- paprika to garnish as using a commercial stock cube.
- ground nutmeg to garnish.
Directions
- Fry onions for 5 minutes.
- Add the rest.
- Cook for 40 mins then blend and serve.
Makes four good bowls of soup. Paprika or nutmeg lift this as well as look good.
