Baked Basque Cheese cake

Not tried yet. Adapted from Baked cheesecake with cherries.

Ingredients

Cheesecake

  • 400g cream cheese
  • 112g caster sugar
  • 22.5ml plain flour
  • 100g sour cream
  • 2 medium eggs
  • 5ml vanilla extract

Sauce

  • 100ml frozen mixed berries
  • 30ml water

Directions

  1. Heat the oven to 240°C.
  2. Butter a 23cm, deep, loose bottom tin and line with paper.
  3. Whisk together the cream cheese and sugar for 2 minutes, add the flour eggs and vanilla whisk until smooth and pour into the tin.
  4. Bake for 20 minutes then drop the oven temperature down to 180°C and cook for another 20 minutes, cool.
  5. Make the sauce
    • Put ingredients into microwavable jug.
    • Heat on full power for 2 minutes.

Cut the cake into slices per serving and pour over the sauce on to the individual slice to taste.
