Roast Turkey for Christmas Day
Ingredients
- Sausage stuffing
- Chestnut stuffing
- Goose or duck fat
- One whole turkey
- Two rashers of streaky bacon
- Enough potatoes for your guests - one or two medium sized potato each - after all you have many other vegetables.
- Bread sauce
- Schwarz turkey gravy
- Pigs in blankets (enough for number of guests - two per person).
Directions
- Work out the time for your turkey from Smart roaster.
- Get up early and make the stuffings.
- Pre-heat the oven to 170°C on fan setting. (Use the fast heat setting if a smaller bird, but to be honest, you've got 10 minutes of work here).
- Put the sausage stuffing in the neck of the turkey and the chestnut stuffing in the body cavity.
- Cover bird in foil.
- Put in oven.
- Stud onion for bread sauce and bring milk to the boil.
- With 40 minutes to go, peel potatoes, and add to pan to boil for 5 minutes.
- Add them to a tray greased with fat for 25 minutes.
- Take out turkey and remove the foil. Return to the oven, and turn up heat to 180°C or use rotatherm setting at 165°C.
- When timer goes, pull out the turkey and put in the pigs in blankets.
- Stand the turkey for 20 minutes.
- Finish off the bread sauce.
- Start to make the gravy.
- When 20 minutes are up, pull out the roast potatoes and pigs in blankets.
