Other recipes | Savory sauces and side dishes

One of my favourite things with roast pork or chicken, or as a tasty snack. There are many recipes out there tying up your oven for a couple of hours or your hub for 90 minutes. This is quick.

Adapted from Braised red cabbage.

Red cabbage for two

Ingredients

  • 25% red cabbage, finely sliced.
  • 25% red onion, finely sliced.
  • 5g brown sugar (optional).
  • 5ml ground cinnamon.
  • 25ml cider vinegar.
  • 40ml red wine.

Directions

  1. Put all in a microwave pot, cover.
  2. Cook for 5 minutes at 1000W.
  3. If eating now, cook a further minute.
  4. Or allow to cool to room temperature, then cook a further two minutes before serving. (Three minutes if you've popped in the fridge!)

Delicious with a roast (probably not chicken) or grilled sausages. Can be stowed in fridge for 7-8 days, ready for warming at the next meal.
