This recipe is very simple and quick but a great deal of washing up (without a dishwasher) and is very potent. Needs the lemon juice to serve.

A tasty starter or interest for a salad.

Smoked salmon mousse

Ingredients

  • 2 slices of smoked salmon for mousse and 2 to create case.
  • Enough whipping cream to cover the 2 slices for the mousse.

Directions

  1. Put two slices of smoked salmon into a food processor and barely cover with whipped cream (about 30ml of whipping cream).
  2. Whizz up until a smooth mousse is created.
  3. Line a ramekin with the two remaining slices of smoked salmon and spoon in the mousse. Chill for at least 30 minutes.

Serve with pepper and lemon juice.
