Based on Country slices. Having read 15 of such directions, I felt this had the best chance of being tasty and like the famous brand with little to no fuss.
Country slices
Ingredients
- 150g Unsalted Butter (Softened)
- 150g Light Muscovado Sugar
- 2 Medium Eggs
- 150g Plain Flour
- 5ml Baking Powder
- 2.5ml Mixed spice
- 80g Luxury Mixed Dried Fruit (The best you can get)
Directions
- Line a 500g bread tin with baking parchment.
- Cream butter and sugar.
- Beat in eggs.
- Beat in flour and baking power and Mixed spice.
- Fold in fruit.
- Pour into bread tin. Bake at 180°C (fan oven) for 45-50 minutes (no need to preheat).
- Cool cake and tin for 10 minutes.
- Turn out and if desired, dust with caster sugar.
Lovely with a cup of tea.
