A great deal of effort but a tasty treat for a special meal the whole family will love.
Duck a l'orange
Ingredients
- 1 orange (optional)
- 120ml of orange juice
- 15ml soft brown sugar
- 15ml white vinegar
- 475ml water
- 30ml lemon juice
- 1 chicken stock cube
- 15ml arrow root
- 120ml Grand Marnier
Directions
This takes 30 minutes or so, so needs to be started before cooking joints!
- If using orange, remove rind
- Add rind to remaining liquid ingredients (excluding water and Grand Marnier) and stock and bring to the boil.
- When reduced by half, stir in arrow root and water.
- Remove from heat and stir in Grand Marnier
- Drain duck juices and recover duck in sauce and cook for 30 minutes before serving.
