Few meals in the world are as tasty and good for the planet as Bubble and squeak. A traditionally English, Scottish or Welsh take on what to do with cooked left over vegetables.
Bubble and squeak
Ingredients
- Left over boiled potatoes
- Left over boiled cabbage or sprouts
- Any other left over vegetables
- Optional 1 diced onion
Directions
- Put the left overs in a single pan and mash together.
- Heat some sunflower oil, dripping or butter.
- If using the onion, start frying it until just turning brown.
- Either add the mash to the onion or start frying in the fat.
- Serve when cooked through.
I love this with fried eggs and bacon as part of a full English fried meal, usually served as breakfast for a bank holiday Monday after a Sunday roast or for Monday lunch.
