Goat's cheese flan
Ingredients
Pastry
(Note this is mixed units but this makes exactly the right amount of pastry for my flan dish!)
- 5oz plain flour
- 1.25oz lard
- 1.25oz butter
- 25ml cold water
Filling
- 15ml tablespoon olive oil
- 2 medium onions sliced thinly into half-moon slices
- 120ml cup heavy cream
- 110ml cup whole milk
- 2 large eggs
- 1 large egg yolk
- 2.5ml teaspoon salt
- 1ml teaspoon black pepper freshly ground
- 2 tablespoons fresh thyme chopped
- 114g fresh goat cheese crumbled
Directions
- Make pastry and line an 8" flan dish.
If using a Kenwood Chef, put all ingredients for the pastry in the bowl. Using the K beater, mix on speed 1 increasing up to speed 4/5. When a ball is formed, stop mixer and place pastry in fridge to rest for at least 30 minutes. - Finely chop onion and then caramelise for 20 minutes, stirring occasionally.
- Mix together eggs, milk, and cream using blender head.
- Line flan dish with pastry and place cheese, onions, and thyme over pricked base.
- Pour over cream mix and bake at 200C for 32 minutes.
