Microwave chicken stock
Based on Leites Culinaria but without the annoying adverts and converted for European units and microwaves. Works really well.
Ingredients
- 70g cooked chicken bones and skin (from an old roast chicken)
- 250ml cold water
- 1/2 garlic clove
- 10-15ml chopped vegetables, such as onion, carrots, or celery
- 0.5ml white pepper and salt to taste, added after cooking
Directions
- Put everything listed in the ingredients into a big microwave jug.
- Cook on 1000W power for 7 minutes - stir halfway through to check it's OK, please.
- Stand for 2 minutes then strain and add the seasoning if required
If not using immediately, refridgerates well for up to five to seven days at 0C. Ensure it is completely cold before placing in fridge in a sealed container.
If doubling amounts, remember to double the time as it's a microwave!
