Celeriac soup

Adapted from instruction book from Celeriac soup.

Ingredients

  • 30ml olive oil
  • 1 celeriac peeled and cut into cubes
  • 1 medium potato peeled and cut into cubes
  • 1 Leek trimmed, washed and roughly sliced
  • 1 Onion peeled and roughly chopped
  • 1 clove Garlic sliced
  • 500ml vegetable stock
  • parsley leaves handful, washed and roughly chopped to garnish

Directions

  1. Heat pan, add oil
  2. Soften veg for 10 minutes then add stock and bring to boil
  3. Boil for 20 minutes then blend.
  4. Serve two bowls and sprinkle with parsley.

Save rest for lunch another day
