Adapted from Panasonic microwave soup recipes to serve one person.
11 minutes start to finish including the washing up.
Quick tomato soup
Ingredients
- 7.5ml oil
- 1 onion chopped
- 1 stick of celery chopped or a glove of garlic
- 5ml paprika
- 1 small tin tomatoes (approx 227g), chopped is fine
- Once tin is emptied, fill with water for a 500ml stock pot or cube! (this is why I don't add salt or pepper).
- 5ml dried basal
Directions
- Put the oil, onion, celery/garlic and paprika in a large bowl and cook on HIGH MICROWAVE for 2 mins.
- Add tomatoes and hot stock to the bowl and cook on MEDIUM MICROWAVE for 6 mins.
- If using a hand blender or glass blender... or allow to cool
- Add dried basil and purée until smooth.
- If you cooled to purée, reheat for 3minutes on Medium power.
- Allow to stand for 5 minutes to cool down! If you tip into the bowl you're going to eat out of this is enough time to allow you to wash up
- Serve
