Originally from the cook book from my first combination microwave oven - this recipe was so good I kept the whole book when the microwave finally went to silicon heaven.

A quick treat, can serve as a meal on a cold winter night.

Fruit crumble

Ingredients

  • 3oz plain flour
  • 1.5oz butter
  • 1.5oz caster sugar - soft brown sugar is great for this
  • A cooking apple
  • 3-4oz blackberries
  • 15-30ml tap water

Directions

  1. Crumb the flour, butter and sugar. A food mixer is great for this or do by hand
  2. Peel apple and remove core before dicing
  3. Line glass dish with apple and cover with the blackberries
  4. Add the water
  5. Pour on the crumble

Bake at 230°C with the microwave on simmer too for 12 minutes. Tastes great with a vanilla ice-cream, which allows it to be eaten from the oven.
