Celeriac soup
Adapted from instruction book from Celeriac soup.
Ingredients
- 2 tbsp olive oil
- 1 celeriac peeled and cut into cubes
- 1 large potato peeled and cut into cubes
- 1 Leek trimmed, washed and roughly sliced
- 1 Onion peeled and roughly chopped
- 1 clove Garlic sliced
- 500ml vegetable stock
- salt and pepper to taste
- parsley leaves handful, washed and roughly chopped to garnish
Directions
- Heat pan, add oil
- Soften veg for 10 minutes then add stock and bring to boil
- Boil for 20 minutes then blend.
- Serve two bowls and sprinkle with parsley.
Save rest for lunch another day
