Chicken tikka masala - serves 2

Ingredients

  • 1 medium onion
  1. 2 large garlic cloves
  2. thumb-sized piece of ginger
  3. 15ml tbsp rapeseed oil
  4. 2 small skinless chicken breasts, cut into chunks
  5. 15ml tikka spice powder
  6. 2.5ml cayenne pepper
  7. 227g can chopped tomatoes
  8. 20g ground almonds
  9. 100g spinach
  10. 23ml fat-free natural yogurt
  11. 1ml coriander, chopped


Directions

  1. Process ginger, garlic and onion in processor
  2. Fry freshly made onion paste for 15minutes
  3. Fry chicken for for 5 - 7 minutes until brown
  4. stir in tikka spice and cayenne pepper
  5. tip in onion paste and tomatoes, bring to the boil
  6. stir in almonds and spinach cook for 10minutes
  7. season then stir in yoghurt and coriander

Serve with brown rice.
